I thought, we needed something sweet, among so many veggies, so meet Lokuma.
As my nickname suggests my cooking style is to revive the traditional recipes with an international twist and create a new BG-Int fusion cuisine!
BTW, what will be the official language, BG or English?
Anyway, here is my lunch today - a feta cheese quesadilla topped with tomatillo salsa and a salad made with tomatoes, cucumbers, olives and basil on a side. Quick and delish!
This salsa is very easy to made and extremely versatile. It is very good with fish. Here is the recipe:
2 Passila peppers
2-3 cloves of garlic
A handfull of cilantro
2 tbsp olive oil
Salt to taste
Turn on the oven on 450 F. Peel and wash the tomatillos, cut them in half and arange them on a cookie sheet. Cut the poblano chillies in half and carefully remove the seeds. Place them on the cookie sheet. Drizle the olive oil and salt over the vegies. Put them in the oven for 15-20 minute or until they get soft.
Put all the veggies in a food processor, and add the rest of the products. Process them for a few seconds.
